{wheat free} Oatmeal Chocolate Chip Cookies




In honor of National Chocolate Chip day (Tuesday), I ran home after work to whip of a batch of some chocolate chip cookie goodness. Although I did cheat and didn't use chocolate chips, but chopped milk chocolate Dove bars intstead. Oh my.

1/2 c. butter (use a substitute for vegan)
1 c. agave nectar
1 t. vanilla extract
1/2 c. apple sauce (recipe calls for pureed silken tofu)
1/2 c. coconut flour (recipe calls for 1 c. sprouted spelt flour)
1/2 c. almond meal
1/2 t. baking soda
1/2 t. sea salt
1 t. cinnamon
1/2 t. cloves
1/2 t. nutmeg
3 c. rolled oats
1 c. chocolate chips (omit in vegan version)


Preheat oven to 350F and line a baking sheet with parchment paper. Cream the butter (substitute), agave and vanilla until blended and fluffy. Mix in apple sauce. In another bowl combine all the dry ingredients, everything but the oats and chocolate, mix. Add dry to the wet and mix until well combined then slowly add oats. I like lots of oats, so I may have added an extra 1/2 cup. Stir in chocolate chips by hand. Spoon cookie shaped blobs onto prepared cookie sheet. Bake for 25-30 mins at 350F or until golden. Enjoy some wheat free goodness!
 
Even the Captain, who doesn't really go for sweets, ate three of these in one night.
 
*Note: I don't know if it was the lack of tofu or what, but these cookies tended to crumble a bit. So eat over a plate.
